Chickpea Avocado Toast

When it is hot, I have everything but want to turn on my oven and raise the temperature of my apartment a few degrees more. Well, I’m not saying that I don’t want fougasse or roasted tomatoes, but let’s say that I’m trying to find other ideas that don’t require cooking, hence this delicious version of toast avocado, chickpea and feta. In addition, they are pretty like all these little sandwiches, don’t you think? During the summer season, I am really a big fan of beautiful mixed salads or savory sandwiches of all kinds!

You want these toasts to be really simple to make, basically they are good toasts of toast on which on deposit of the avocado cut into thin strips and I reused the base of my chickpea salad in cumin. Of course, you can add a few herbs, spices and crumbled cheese to the taste buds. You want in my recipe that I use feta, mint and black cumin but you can also do with what you have in the signs: basil leaves, sesame, etc. I leave you with my version of avocado toast, but don’t forget to leave me a little comment to tell me what you think about it and comment on how you would personalize your own toasts !!

Texture, toasted-ness, toppings… oh, there are so many variables. Personally, I like a simple avocado toast: citrus for some acidity, a splash of olive oil, and a few liberal turns of salt and pepper. My pet peeve? A textureless, totally-mashed avocado is the quickest way to ruin my avocado toast! But this is personal preference, so make this Chickpea Avocado Toast how you like it!

As always, I love to think of extra additions or swaps I would make to this recipe. A tahini-lemon dressing, some chili flakes, sliced green onions, some crumbled feta cheese…. please stop me. Cilantro, a fried egg, a poached egg, broccoli sprouts… okay, okay, stopping.

  • 1 avocado peeled and pit removed
  • 1/2 cup cooked chickpeas
  • 1/4 teaspoon kosher salt
  • 1 teaspoon lemon juice
  • 4 slices whole grain bread toasted
  • 3 tablespoons fresh cilantro roughly chopped


  • In a small bowl, combine the avocado and chickpeas. Mash together, leaving a few lumps. Stir in the salt and lemon juice
  • Spread the avocado mixture on the toasted bread. Top with fresh cilantro and serve.
